| 8 | egg whites |
| 250 g | unsalted butter, melted & cooled |
| 2 cups | icing sugar mixture |
| 2/3 cup | plain flour |
| 1 1/3 cups | almond meal |
| 2 teaspoons | finely grated lemon rind |
| 125 g | blueberries |
Grease or line a 12 hole friend pan
Preheat oven to 180 C
N
Whisk egg whites in a large bowl until frothy
Add butter, icing sugar, flour, almond meal & rind
Stir until smooth
Spoon into pan holes
Top with berries
Cook for 20 minutes
Stand for 5 minutes
