Makes 12 | |
1 tablespoon | olive oil |
4 bacon rahers, chopped | |
1 small | red onion, finely chopped |
2 cups | self raising flour |
1 teaspoon | baking powder |
2 tablespoon | caster sugar |
1 cup | grated cheddar cheese |
100 gr | melted butter, cooled |
1/2 cup | milk |
1/2 cup | sour cream |
2 | eggs, lightly beaten |
1/4 cup | chopped semi dried tomatoes |
Grease a 12 cup muffin tin
Heat oil in a frying pan
Cook bacon until crisp
Add onion, cook until soft
Transfer to a sieve to drain & cool
Sift flour, baking powder & sugar into a large bowl
Stir in half the cheese
Place butter, milk, sour cream & eggs in a separate bowl
Mix well
Add to flour mixture with bacon mix & tomato
Mix gently
Spoon into muffin holes
Sprinkle tops with remaining cheese
Bake at 200C for 20 minutes
