Pumpkin Feta & Olive Muffins

250 gr | butternut pumpkin, peeled |
2 tablespoon | milk |
1/4 cup | light olive oil |
1 | egg, lightly beaten |
1 cup | self raising flour |
1/2 teaspoon | baking powder |
75 gr | feta cheese, crumbled |
2 1/2 tablespoons | finely chopped kalamata olives |
2 tablespoon | finely chopped basil |
Grease 2 x 12 hole mini muffin pans
Cut pumpkin into 2 cm pieces
Bake in hot oven (200 C) for 20-25 minutes
Transfer to a bowl
Add milk, mash until smooth
Cool, stir in oil & egg
Sift flour & baking powder into a large bowl
Add pumpkin mixture, cheese, olive & basil
Stir but do not over mix
Spoon into muffin tins
Bake at 190 C for 15 minutes
Stand in pans for 5 minutes
Turn out onto wire rack
Pumpkin maybe replaced with sweet potatoes
