    3  eggs
    1 cup  brown sugar
    3/4 cup  vegetable oil
    1 1/2 cups  self raising flour
    1 teaspoon  baking soda
    1/2 teaspoon  cinnamon
    1/2 teaspoon  mixed spice
    2 cups  grated carrots
3/4 cus chopped walnuts
    1 teaspoon  vanilla extract
Cream Cheese Frosting
    125 gr  cream cheese, chopped, at room temperature
    60 gr  butter, chopped, at room temperature

1/2 chip icing sugar mixture

Method

Preheat oven to moderate, 180 degree celcius
Lightly grease & line a 20 cm cake tin
In a large bowl whisk eggs, sugar & oil
Sift floor, baking soda & spices
Fold through the egg mixture, carrots, walnuts & vanilla
Pour batter into the pan
Bake for 50 - 60minutes
