1 cup | brown sugar |
3/4 cup | vegetable oil |
1 1/2 cups | self raising flour |
1 teaspoon | baking soda |
1/2 teaspoon | cinnamon |
1/2 teaspoon | mixed spice |
2 cups | grated carrots |
3/4 cus chopped walnuts | |
1 teaspoon | vanilla extract |
Cream Cheese Frosting | |
125 gr | cream cheese, chopped, at room temperature |
60 gr | butter, chopped, at room temperature |
1/2 chip icing sugar mixture
Method
Preheat oven to moderate, 180 degree celcius
Lightly grease & line a 20 cm cake tin
In a large bowl whisk eggs, sugar & oil
Sift floor, baking soda & spices
Fold through the egg mixture, carrots, walnuts & vanilla
Pour batter into the pan
Bake for 50 - 60minutes
