Vegan Meatball Pate (Raw)

This is theoretically a pate, but it's so thick that it sticks together like meatballs. That, and the flavor, is why I named it Italian Meatball Pate. I love it when I accidentally make something wonderful! Ingredients: | |
1 c. | raw almonds |
1/2 c. | pumpkin seeds, (I use pre-sprouted, dried pumpkin seeds with sea salt. If you use unsalted, you might have to add some sea salt to the recipe). |
1/2 c. | sun dried tomatoes |
2 stalks | celery |
1 | scallion |
1/2 tsp. | basil |
1/2 tsp. | oregano |
1/4 cup | water |
Process everything in the food processor except the water. Add the water in small quantities, as necessary, if the processor gets stuck. The end product should be a very thick paste which would hold together in a giant ball without crumbling. Makes 3-4 large (fist-sized) meatballs.
