Vegan French Toast

Banana-Cinnamon French Toast
    1 cup  fortified vanilla soymilk
    1/4 cup  quick-cooking oats
    1 medium  banana
    1 tsp  vanilla
    1 tsp  cinnamon
    1 TBSP  fresh ground flax seed, (optional)

Combine soymilk, oats, and banana in a blender. Blend on high for about 2 to 3 minutes, or until completely smooth. Pour into a shallow baking dish. Add cinnamon and flax. Mix well. Soak (it may take a minute or two depending on the type of bread you are using) each piece of bread in the mix before placing it on a non- stick skillet ** make sure to coat pan with non-stick spray.Cook on medium-high heat for about 3 min on each side or until golden brown. Turn carefully because they get a little sticky.
Enjoy alone or with a little maple syrup!
