Mac n Cheese

Macaroni and Cheese with Meatballs | |
1 cup | uncooked macaroni pasta |
8 | frozen meatballs, (see Note) |
1 tablespoon | butter |
1 tablespoon | flour |
1/2 cup | milk, (at least 1 percent) |
1 1/2 cups | grated pepper jack cheese |
salt, to taste | |
pepper, to taste |
BRING a large pot of water to a boil. Add macaroni, and cook until tender. While macaroni cooks, grate cheese (if necessary). Microwave meatballs to thaw, about two minutes. Cut meatballs in half, and set aside.
MELT butter in medium-sized saucepan. Add flour, stirring constantly, and cook on medium-low heat 1 minute as mixture forms a paste. Add milk slowly, stirring constantly, and cook 3 minutes until milk thickens slightly. (You will have a few lumps. Ignore them.) Add cheese, stirring until it melts. Remove sauce from heat until noodles are done.
REMOVE noodles from heat when just tender, and drain thoroughly. Pour drained noodles into a pan with cheese sauce, add meatballs, and stir to mix well. Season with salt and pepper to taste. Serve at once.
Note: Turkey meatballs can be used. This recipe may be doubled.
Yield: 2 servings.
