Plum Tomato and Lemon Sauce

Ingredients | |
1 tablespoon | extra virgin olive oil |
3/4 cup | diced red onion |
1/2 teaspoon | minced garlic |
1 1/2 pounds | plum tomatoes |
1 teaspoon | lemon zest |
3 tablespoons | fresh lemon juice |
2 teaspoons | evaporated cane juice |
1/2 teaspoon | sea salt |
1/4 teaspoon | freshly ground black pepper |
1/4 cup | chopped basil |
Instructions
1. In a large saucepot heat olive oil over medium heat and add onions and garlic and sauté until onions are translucent.
2. Add lemon zest and cook for 1 minute. Add tomatoes, lemon juice and evaporated cane juice and cook until the tomatoes are very soft about 15 minutes. Remove from feat and add salt, pepper and basil and let cool. Pour sauce into a blender container and puree.
