Creamed Leeks

Ingredients | |
1/2 pounds | chopped fresh leeks, white part only |
1 1/2 tablespoons | unsalted butter |
1 1/3 tablespoons | all purpose flour |
2/3 cup 1% | milk |
1/2 teaspoon | sea salt |
1/8 teaspoon | freshly ground black pepper |
2 teaspoons | fresh lemon juice |
Instructions
1. In a small saucepan, over medium heat, melt butter. Add leeks, sautéing until translucent. Add flour and cook for 5 minutes, stirring constantly.
2. Keeping the heat at medium, add milk and continue stirring until milk thickens and coats leeks. Lower the heat to low and cook for 3 more minutes stirring constantly to avoid scalding.
3. Remove from heat and add salt, pepper and lemon juice and serve.
