Cream Cheese Stuffed French Toast

Ingredients
    4 tablespoons  lowfat cream cheese
    1 cup  sliced fresh strawberries
    8 slices  multi-grain bread
    1/2 cup  fat free milk
    2 large  eggs
    1/8 teaspoon  ground cinnamon
    1/4 teaspoon  pure vanilla extract
    1 tablespoon  canola oil
    1/2 cup  pure maple syrup

Instructions
1. Place cream cheese in a small bowl and beat until softened and spreadable. Evenly spread 1 tablespoon cream cheese on 1 slice of bread and spread evenly. Top cream cheese with 1/4 cup of sliced strawberries. Top with second slice of bread to form a sandwich. Repeat with rest of ingredients.
2. In a shallow, wide bowl, combine milk, eggs, cinnamon and vanilla. Dip each sandwich into the egg mixture coating both sides.
3. Heat a large sauté pan over medium heat and lightly coat with canola oil. Cook each sandwich until golden brown on both sides. Repeat for remaining French toast sandwiches. Serve each French Toast sandwich with 2 tablespoons maple syrup.
