Orange Cake

ORANGE CAKE | |
Ingredients | |
1 ¾ cup | cake flour?1 ¾ cup castor sugar |
½ cup | oil?6 egg yolks |
1 tsp. | vanilla?6 egg whites stiffened |
1 ½ tsp. | baking powder |
Rind of 1 | orange finely grated |
¾ cup | fresh squeezed orange juice |
Method:
Mix all the above ingredients together except egg whites. Beat egg whites until stiff then pour egg white into cake mixture folding in with a METAL spoon. Pour into lightly greased pan (I use the non stick one with a hole in the middle) and bake at 150 – 160 degrees for 1 hour. Remove and tip out. Let cool. When cooled sprinkle icing sugar on top of the cake.
