The best cannelini soup

2 cans | drained cannelini beans |
Sauté in 1 T olive oil: | |
3 | garlic cloves, chopped |
1 lge | fresh rosemary sprig |
1 | bay leaf |
Discard leaf and sprig. Heat 2 T oil and sauté: | |
1 lge | carrot, chopped |
1 lge | celery stalk, chopped |
1 lge | onion, chopped |
Add 2 chopped garlic cloves | |
1 tsp | thyme |
4 c | chicken broth |
Beans |
Simmer 25 mins.
Puree all but 1 1/2 c beans.
Add chorizo slices.
Stir in 1/4 c whipping cream.
We also like kale or spinach.
