Chicken, Carrot and Leek Parcels

2 | carrots, grated |
1 | Garlic Clove, crushed |
4 | canned Anchovy Fillet, drained and halved lenghtways |

Preheat the oven to 400F. Cut out four sheet of lightly greased greaseproof paper, about 9" square.
Divide the sliced leeks equally among the paper squares. PUt a piece of chicken on top of each pile of leeks and season well.
Mix the grated carrots and garlic together. Season lightly and place on top of the chicken portions. Top each with two of the anchovy fillet halves.
Carefully wrap each parcel by bringing up the two sides of paper to the middle and folding them over into a tight double fold. Fold the corners in at each end and tuck underneath. BAck for 20 minutes or until the chicken is cooked. Serve hot, in the paper.
