Cajun-Style Cod

2 tbsp | Natural Yogurt |
1 tbsp | Lime |
Lemon Juice, alternative | |
1 | Garlic Clove, crushed |
tsp | Ground Cumin |
1 tsp | Paprika |
1 tsp | Mustard Powder |
1/2 tsp | Thyme, Dried |
1/2 tsp | Oregano, Dried |
Salt | |
1 tbsp | Vegetable Oil |
halved lemon slices to garnish
new potatoes and a mixed salad to serve
Pat the cod steaks dry on kitchen paper. Mix together the yogurt and lime or lemon juice and brush this mixture lightly over both sides of the fish.
Mix together the crushed garlic clove, spices, herbs and slat. Coat both sides of the fish with the seasoning mix, rubbing in well.
Brush a ridged griddle with the oil, or heat it in a frying pan. When it is very hot, add the fish and cook over a high heat for 4 minutes, or until the underside is well browned.
Turn over and cook for a further 3 minutes, or until the steaks have cooked through. Serve accompanied by new potatoes and a mixed salad and garnashed with lemon.
Note: This recipe works equally well with any firm-fleshed fish, such as swordfish, tuna, hake or halibut.
