Toasted Coconut Pie

1 1/4 cup | sugar, divided |
2 Tbsp | flour |
4 | eggs, divided |
2 cup | milk |
3/4 stick | butter |
1 1/2 cup | coconut |
1 teas | vanilla extract |
Stir 1 cup sugar and flour together in a saucepan. Add milk and egg yolk and heat. Melt butter in skillet and add coconut. Brown coconut and add to hot mixture. When it thickens, add vanilla and pour in cooked pie shell. Beat egg whites and add 1/4 cup sugar. Pour on pie and brown top.
For Banana pudding;
omit coconut, add butter to mixture when it thickens then vanilla. Layer with vanilla wafers and bananas and top with meringue and brown the top.
