Tortilla Flat Stacks

    1 c.  cooked black beans, drained and rinsed
    1 lg  poblano pepper, seeded and diced small
    1/4 c.  finely chopped red onion
1/4 packed c. cilantro leaves chopped Juice 1 lime
    1/4 tsp  sea salt
    1  avocado, pitted, peeld and chopped
4 whole grain corn tortillas
    1 tsp  ground cumin
    2 oz  reduced fat mexican cheese blend or part skim mozzerella shredded
Olive oil cooking spray
    8  egg whites
    1/4 c.  low fat sour cream

Instructions:
Preheat oven to 350. In a medium bowl, combine beans, pepper, onion, cilantro, lime juice, and salt. Gently fold in avacado and set aside.

Place tortillas on a baking sheet and sprinkle cumin over top. Then sprinkle with cheese, bake for 5 min till cheese has melted.

meanwhile, heat a skillet on med. lightly coat with cooking spray. pour in egg whites, and cook for 2-3 min or until white. gently stir and remove from heat.

Place 1 tortilla on each plate, spoon eggs, add 1/2 c. bean mixture and top with sour cream.
