Tomato and Scallion Breafast Melts

4 whole-grain English muffins, split 1/4 non-fat greek style yogurt | |
11/2 tbs | dijon mustard |
1 tbs | EVOO |
1/2 tsp | dried oregano |
1/8 tsp | sea salt |
2 oz | low fat sharp cheddar cheese, grated, (about 1/2 c.) |
1/2 cup | grape tomatoes, quartered |
4 | scallions, bulbs removed, white and green parts finely chopped |
Instructions
preheat broiler, place muffins cut side up on baking sheet and broil for 2 min. till lightly browned.
in a small bowl, whisk together yogurt, dijon, oil, oregano, and salt. spoon equal amounts of mixture onto each muffin half spread evenly to coat. sprinkle with cheese, tomatoes, scallions. broil for 1-2 min until cheese has melted.
