Pistou dumplings in lime broth

1 bunch | scallions, thinly sliced, white and green parts separated and divided |
4 c | vegetable broth |
2 | limes, juice |
1 T | tamari, low sodium |
1/2 c | parsley, packed |
1/2 c | thai basil, packed |
4 cloves | garlic |
1/2 c | edamame |
2 T | olive oil |
12 | wonton wrappers, whole wheat |
Mist sauce pan w spray and sweat scallion white parts over med heat for 4 mins then add broth. Reduce by 25%. Season w salt and pepper. nd add lime juice and tamari. Process parsley basil and garlic with pinch salt. Fold in edamame and salt and oil.
Prepare wontons: lay out wonton. Use water to soften edges. Spoon on 1 t filling. Gather up edges and pinch together. Add dumplings to broth and boil for 5 to 8 mins; serve immediately. Garnish w green parts.
