    2 c  mushrooms, chopped
    3/4 c  red peppers, roasted, jarred, squeezed of liquid
    1/2 c  artichoke heart, in water, squeezed of liquid
    1/2 c  green onions, finely chopped
    1 T  olive oil
Herbs de Provence
    6  eggs, slightly beaten (or equivalent egg substitute
    1.5 oz  goat cheese
    0.5 oz  Parmesan cheese, grated

Preheat to 350. In lg skillet med to med-hi sauté mush peppers artichoke onions herbs in oil until warmed through. Place mixture in round pan or Divide among 4 ramekins missed w/spray. Cover w/eggs and add goat cheese in small drops before sprinkling W/parm. Cook for 25 mins or until set.
