Easy make-ahead B'fast quiche

3/4 c | red peppers, roasted, jarred, squeezed of liquid |
1/2 c | artichoke heart, in water, squeezed of liquid |
1/2 c | green onions, finely chopped |
1 T | olive oil |

6 | eggs, slightly beaten (or equivalent egg substitute |
1.5 oz | goat cheese |
0.5 oz | Parmesan cheese, grated |
Preheat to 350. In lg skillet med to med-hi sauté mush peppers artichoke onions herbs in oil until warmed through. Place mixture in round pan or Divide among 4 ramekins missed w/spray. Cover w/eggs and add goat cheese in small drops before sprinkling W/parm. Cook for 25 mins or until set.
