Banoffee pie

8" ready made sweet pastry case | |
14oz | can skimmed, sweetened condensed milk |
2oz | sugar. 2oz sunflower marg. 3 bananas, peeled and sliced |
5floz whipping cream 5oz pot natural yogurt. | |
1tbsp | cocoa. 1oz toasted flaked almonds |
Put pastry case on large plate. Put condensed milk, sugar and marg in a saucepan. Heat gently until sugar dissolves and marg melts. Bring to boil over med heat, stirring cont. Increase heat and boil rapidly for 5 mins, stirring until mix turns a toffee colour. Set aside.
Arrange bananas over pastry base and quickly spoon over the liquid and level with the back of a wet tbsp. Chill for 30 mins. Whip cream and fold in yogurt and spoon over mixture. Sift cocoa on top and sprinkle the almonds around the edge. Serves 8.
