Chocolate mint cupcakes

2 cups | semi sweet chocolate chips, divided |
3/4 cup (1 1/2 sticks) | butter |
1 1/2 cup | sugar |
3 | eggs |
1 1/2 teaspoon | mint extract |
1 1/2 teaspoon | vanilla extract |
2 1/2 cups | all purpose flour |
1 teaspoon | baking soda |
1/2 teaspoon | salt |
1 1/2 cups | water |
Directions
Preheat oven to 350
Melt one cup of chocolate chips and butter together in microwave or on stove.
Stir until chocolate is completely melted.
Pour into electric mixer bowl. Add sugar and beat until well combined.
Beat in eggs one at a time. Add vanilla and mint. Stir in 1/2 cup flour, baking soda and salt, mix well. Add remaining flour and water, mix until smooth. Fold in remaining cup of chocolate chips.
