Soup- Pumpkin and Carrot

Pumpkin & Carrot Soup | |
40g | butter |
1 | onion chopped |
2 cloves | garlic |
500g | carrots sliced |
1/2 cup (125ml) | cup orange juice |
750g | pumpkin, peeled & roughly chopped |
1.5 litres | chicken stock |
I tablespoon snipped fresh chives
1) Melt butter in a saucepan.
2) Cook onion for 5mins.
3) Add garlic & carrot, cook for 3mins.
4) Pour in orange juice & bring to boil, add pumpkin & stock. Bring back to boil.
5) Reduce heat & simmer for 30mins till pumpkin is cooked.
6) Blend the soup in a blender till smooth
