Spinach pesto brown rice

| 3c. | Baby spinach divided |
| 2 tbsp | Parmesan cheese |
| 1 clove | garlic |
| 1 c. Plus 2 tbsp | water divided |
| 1tbsp | olive oil |
| 1/2 c. | Brown rice |
| 1/2 tsp | salt |
| Black pepper |
Place 2 c. Spinach,garlic cheese in food processor. Process until coarse paste form. With motor running slowly add 2 tbsp water and oil till smooth. Season with salt as desired. Set aside.
cook rice per package direction with 1c. Water and salt, if desired,in medium saucepan. Chop remaining spinach &add during last 5 minutes of cooking. Remove from heat stir 1 tbsp pesto.
