Chicken Cordon Bleu Casserole

2 T. | Butter |
1/2 large | onion, chopped, (about a cup) |
2 Cloves | Garlic, minced |
2 C. | Shredded cooked chicken |
3/4 C. | Prediced ham |
1 C. | Uncoiled long grain rice |
1 1/4 C. | Chicken broth |
1/4 C. | Milk |
1/2 t. | Salt |
1/2 t. | Pepper |
1C. | Freshly grated Parmesan cheese |
Preheat oven to 350 degrees. Spray an 11 x 7- inch baking dish with cooking spray. In a medium saucepan, melt butter over medium high heat. Add onion & garlic; cook until onion is tender. Add chicken & ham; cook until heated through. Add rice & cook for 1 minute, stirring constantly. Stir in chicken broth, milk,salt & pepper; cook for 2 minutes. Pour mixture into prepared baking dish. Sprinkle with cheese. Cover & bake for 45 minutes or until rice is tender.
