    9oz  plain flour, 1/4 tsp salt and 1 tsp mixed spice, all sieved
    8oz  butter and 8oz soft brown sugar, creamed together
    1tbsp  black treacle
    4  eggs
2lb mixed dried fruit, 4oz glace cherries quartered, 4oz candied peel chopped and 2oz almonds.
    2tbsp  brandy

Oven GM2/150c/300f, then GM1/2/120c/250f.

8" cake tin lined and greased. Add treacle to creamed mixture. Ad d eggs one at a time with a spoonful of flour. Fold in remaining flour. Add fruit, cherries, peel and nuts. Place in tin and make a hollow in middle. Bake in oven for 3 hours then reduce for an hour. Leave to cool for 20 mins then turn out.

Spoon brandy over the top and leave to cool. Can freeze in double thickness foil. Thaw at room temp for 6-8 hours.
