      Chicken
Chicken broth from boiling chicken
    1  onion whole
    1  pepper
    8 cups  water
For paella
      Chicken
Chicken broth 5 cups
    2 cups  rice
    1/2 cup  olive oil
    1/2 cup  cooking wine
      Chorizo
    1  onion chopped
    1  pepper chopped
    6  garlic minced
    1 can  tomato sauce
    1 tsp  comino
    3  bay leaves
    1 can  beer
      Salt to taste
      Pepper
      Saffron

Seafood- mussels,clams,octopus,lobster

Sauté onions, pepper in olive oil when tender add garlic and chorizo
Add tomato sauce,cumin,wine
Put sofrito in pan. Add 5 cups broth rice chicken cook at high heat till boiling
Lower to low add salt saffron, seafood till rice is almost done add can of beer.
Cook on high for about 4 minutes to get raspa. If it gets too dry add more broth.
