Orange Yogurt Waffles

2 | egg yolks |
4 | egg whites |
400 mL | plain low-fat yogurt |
50 mL | milk |
15 mL | grated orange peel |
50 mL | orange juice |
30 mL | sugar |
2 mL | nutmeg |
25 mL | margarine |
250 mL | flour |
175 mL | wholewheat flour |
5 mL | baking powder |
10 mL | baking soda |
1. Place egg yolks in a large bowl. Place egg whites in a small bowl and set aside.
2. Beat yolks with milk, orange peel, orange juice, sugar, nutmeg and margarine until smooth.
3. In another bowl, mix flours, baking powder and baking soda.
4. Stir dry ingredients into egg yolk mixture, until just moistened. DO NOT over stir.
5. Beat egg whites in a clean bowl, until stiff peaks form. Fold into batter.
6. Cook in preheated waffle iron. (Spray once with oil.)
