Thai chicken - lovely

| Tin coconut milk. 3-4 cloves garlic, peeled and chopped 2-3 fresh green chillies, deseeded and chopped | |
| 1-2tsp | ground Ginger. 3tbsp light soy sauce |
| Grated zest and juice of 1-2 limes | |
| 2 tbsp | caster sugar. 1 pack of fresh coriander |
| 4 | boneless chicken breast |
Place in blender all ingredients except for chicken, reserving a little coriander for the garnish. Blend for a few seconds until well mixed. Pour over chicken and marinate for at least 1/2 an hour. Either grill or oven bake.
Serve with thai fragrant rice or basmati. Serves 4.
