1small can | pineapple chunks. 1 large banana |
Juice of lemon or lime. 2 chicken breasts | |
1 small | onion, chopped. 1 tsp brown sugar |
1 clove | garlic, crushed. 2 tsp curry powder |
1/2 tsp | allspice. Few drops Tabasco |
1/2 | red pepper, diced. 1/2 pint chicken stock |
Seasoning
Place pineapple with juice and banana in a bowl. Add lemon or lime. Dry fry chicken for 3-5 mins until brown. Remove from pan. Add onion and sugar, stir well. Add garlic and heat then add curry, allspice, Tabasco and red pepper. Return chicken to pan add stock and fruit mixture. Simmer gently for 15 mins. Serve on a bed of boiled brown rice.
