Coconut sorbet

Zest and juice of 3 limes | |
2 pieces | lemon grass chopped |
200g | caster sugar |
2 red chillies, finely chopped | |
1 ball | stem Ginger in syrup drained and finely chopped |
1 x 400ml | can coconut milk |
place lime zest, lemon grass, sugar and half the chilli in a pan with 200ml water. Stir over a low heat until the sugar has dissolved. Bring to a simmer, the remove from heat and allow to cool. Once cooled strain through a sieve add lime juice, remaining chilli, Ginger and coconut milk and stir well. Place the mixture into a freezer proof container and freeze for 3-4 hours until the mixture has thickened to sorbet consistency, stirring well every hour. Remove from the freezer 10 mins before serving.
