Butternut squash and goats cheese and thyme tart

1 medium | butternut squash, chopped and roasted in olive oil |
375g | ready rolled puff pastry |
1 med | egg beaten |
2 x 125g | welsh goats cheese, crumbled |
1 tbsp | fresh thyme leaves |
25g | pumpkin seeds |
Black pepper |
Oven gas 6/200c/180cfan
Grease and if wish line a baking tray. Roll out pastry to cover tray. Prick base and brush edges with egg. Bake for 10-15 mins until just risen and golden.
Scatter butternut squash, cheese, thyme and pumpkin seeds over base. Season with black pepper and return to oven for 10-15 mins until cheese melts.
