Red onion and goats cheese tart

12 tsp | olive oil |
3 | red onions, thinly sliced |
Splash balsamic vinegar | |
180g | goats cheese, crumbled |
Black pepper |
Beaten egg to glaze

Oven gas7/220c/fan200c. Serves 4-6
Grease tin. Sweat onions in a pan for 5 mins. Soft not browned. Add a little balsamic vinegar and a twist of black pepper and cook for a further 3-5 mins.
Roll pastry until 1/4cm thick. Trim edges. Place cooked onion on the base. Sprinkle cheese over. Brush rim of tart with beaten egg and cook for 8-10 mins until crisp and golden.
