    1  celery head
    1 1/2 oz  butter
    1  onion
    1 1/2 pint  veg stock
    2  egg yolks
5floz single cream
    4oz  blue Stilton

Seasoning

Leave leaves for garnish and chop the remaining celery. Melt butter in large saucepan, add celery and chopped onion, cover and cook until soft. Add stock and bring to boil, cover and simmer for 20 mins. Cool slightly, puree in blender.
Sieve mixture to get rid of stringy bits. Reheat gently do not boil.

To finish soup beat eggs and cream together. Stir in a small ladle of soup into egg mixture and pour back into soup. Stir I. Cheese, season if required.
