4tsp | olive oil |
3oz | fresh breadcrumbs |
4 | skinless, boneless chicken breasts |
4tbsp | garlic and herb soft cheese |
Oven. Gas 6/200c/180c fan
Whizz together the two peeled garlic cloves, parsley and 1tsp olive oil. Add breadcrumbs and seasoning before pulsing briefly to mix. Tip onto plate. Cut a slit roughly thumb length in side of each chicken at the plump end. Share cheese between each breast and press edges together to seal. Rub 2tsp oil over all the chicken breasts before pressing them into nervy breadcrumbs.
Place coated chicken in a shallow roasting tin. Scatter round the remaining unreeled garlic cloves and drizzle with the rest of e oil. Bake for 20-25 mins until chicken is cooked and crumbs crisp and golden. Squeeze out the soft roasted garlic from the skins and serve with the kievs.
