Red pepper frittata

300gsalad potatoes | |
1 | red pepper, chopped |
3 | spring onions, chopped |
1 | garlic clove, crushed |
6 | eggs |
15g | chopped parsley |
80g | grated cheese |
Cook salad potatoes until tender. Roughly chop into bite size pieces. In a frying pan add a little oil and sauté pepper, onions and garlic over a low heat for 5 mins. Take off heat and stir in potatoes.
In a bowl whisk eggs, parsley and cheese. Pour into pan and cook on low until eggs are almost set.
To melt cheese and finish setting eggs, pop pan under a preheated grill for 5-10 mins. Serve piping hot.
Serves 4. Serve with a salad and crusty bread.
