Spiced chickpea salad

12oz | dried chickpeas, soaked overnight. |
2tbsp | chopped fresh coriander |
Dressing: 3tbs olive oil, 1small onion chopped, 1 green chilli deseeded and chopped, 1 clove garlic crushed, 2tsp ground coriander, 1tsp ground cumin, 1tsp turmeric, salt and pepper and 2 tbs natural yogurt.
Drain chickpeas and put in saucepan with fresh water. Bring to boil and simmer for 1 hour or until tender.
Meanwhile, make the dressing. Heat oil, add onion, chilli and garlic and cook for 2-3 mins. Stir in spices and cook for 1 min. Season to taste with salt and pepper. Turn into large bowl and stir in the yogurt.
Drain chickpeas, cool briefly then remove skins while warm. Add to spice mixture and mix well. Leave to marinate for at least 2 hours.
