Dark Chocolate Tagalong Cookies

Ingredients | |
1 1/2 cups | creamy peanut butter |
1/2 cup | confectioners sugar |
1/2 tsp | vanilla extract |
8-oz | dark chocolate |
STEP 1
Make the Trefoils Shortbread Cookies as per Trefoils recipe. With following change.
Use a spoon or scoop to make an indentation in the center of the cookies after baking but before the cookies cool.
STEP 2
In microwave safe dish, sift the powdered sugar into the peanut butter mixing well.
Microwave in 30 second intervals, stirring between each, until the mixture is very melted.
Stir in the vanilla extract.
STEP 4
With a spoon or piping bag pile filling into the indentation on the cookie.
STEP 5
Melt chocolate in microwave safe dish checking every 30 seconds and stirring frequently until liquid.
Keep the chocolate warm with placing the microwaved bowl into a larger bowl of hot water. Reheat in the microwave as needed.
Dip the cookies into the chocolate with a fork, give that fork some healthy taps on the side of the bowl to remove the excess chocolate, and place cookies on waxed paper to cool.
