Martha Stewart's Recipe
    1/2 c  butter, (1 stick), at room temperature
    1 c  sugar
    2 large  eggs
    1 1/2 c  flour
    1 tsp  baking soda
    1 tsp  salt
    1 c  very ripe bananas, mashed, (~3 bananas)
    1/2 c  sour cream
    1 tsp  vanilla extract
    1/2 c  chopped pecans or walnuts, (optional)


Directions
1. Preheat oven to 350 degrees.
2. Butter 9x5x3 inch loaf pan; set aside. (Unless you have a Demarle loaf pan)
3. With an electric mixer, cream butter and sugar until light and fluffy.
4. Add eggs and beat to incorporate.
5. In a medium bowl, whisk together flour, baking soda and salt.
6. Add to butter mixture and mix until just combined.
7. Add mashed bananas, sour cream and vanilla; mix to combine.
8. Stir in nuts (if desired) and pour into pan.
9. Bake until cake tester inserted into center of loaf comes out clean, about 1 hour.
10. Let rest in pan for 10 minutes, then turn out onto a rack to cool.
