Vegetable Strata

6 oz | fresh mushrooms, sliced |
1/2 cup | green onions, diced |
1/2 cup | onions, chopped |
1 medium loaf | Italian bread, (approximately 10 oz), cut into 1"" cubes |
1 | red bell pepper, sliced into thin strips |
1 | green bell pepper, sliced into thin strips or 1/2 cup broccoli, chopped |
1 cup | reduced-fat cheddar cheese, shredded |
1/4 cup | Parmesan cheese, grated |
6 | eggs |
1 3/4 cups | fat free milk |
1/4 teaspoon | salt |
1/4 teaspoon | pepper |

Steps:
Spray the bottom on a non-stick skillet with vegetable cooking spray. Saute mushrooms, green onions, and red and green pepper over medium-high heat until tender. Set aside. In a small bowl, combine cheddar and Parmesan cheese. Spread half of the bread cubes in an 11x7" baking dish sprayed with vegetable cooking spray. Cover with half of vegetable mixture, sprinkle with half of cheese mixture, repeating layers. In a medium bowl, combine eggs, milk, salt and pepper, then pour over the strata. Cover and chill overnight in refrigerator to set. Preheat oven to 350 °F. Bake uncovered until set and lightly browned about 50-60 minutes. Garnish with tomatoes and green onion tops, if desired. Makes 6 servings.
