Ingredients 1 number Coconut, to make 1 cup thick+ 2 cups thin milk | |
11/2 cups | rice |
Salt to taste | |
1 handful | cooked rice |
1 tbsp | toddy, coconut water or soda bicarb. |
Method
Soak rice in water for 5 hrs. Grind with a little water. Half way through keep aside 1 tbsp to make a kanji. Continue grinding until smooth. Add toddy, coconut water or soda bicarb 1/2 cup thin coconut milk, kanji and cooked rice and leave overnight to rise.
( To make kanji, cook the 1 tbsp half ground rice with a little water and keep stiring until cooked and thick.)
Next morning, mix it with the coconut milk and a pinch of salt until it gets a loose consistency.
Heat an appam chatti, spread gingerly oil with a cloth over it.when hot, place a big spoon of batter and twist a circle to spread on chatti. Top middle of appam with a spoonful of thick milk. Cover and cook.
For egg, put 1/2 spoonful of milk and break egg on top. Cover and cook.
