Carrot cake

6oz | marg. 6oz dark brown sugar |
3 eggs. 1 orange, grated rind | |
2tsp | orange juice. 5oz carrots peeled and finely grated |
6oz | self raising flour. 2tsp baking powder |
Decorate with cream cheese frosting (see recipe). Oven gas 4/180C/375F
Prepare by using creaming method. Folding in the orange rind, juice and carrot with the flour and baking powder. Mix well. Place in greased and lined 7" tin. Bake for 1 1/4 hours. When cool decorate with cream cheese frosting.
