Lamb roast

butterfly the leg, then marinate and roll and tie to roast when using the oven. Favorite Marinade for Grilled Lamb. | |
1/2 c | Vegetable oil |
1/3 c. | Soy sauce |
1/4 c. | Fresh Lemon juice |
3 Tbsp | prepared mustard,, (yellow preferred, but could use Dijon, etc.) |
2 Tbsp | Worcestershire Sauce |
1 clove | garlic, minced |
1/4 tsp. | pepper |
1 tsp. | sugar |
1 tbsp | honey |
Bunch | rosemary |
Whisk all together except oil, then drizzle in oil while whisking to make a slightly thickened marinade emulsion. Marinate meat at least 2 hours of overnight. Grill over charcoal (or bake in oven as usual until done to your liking,) basting with marinade occasionally. Potato Fry | |

Fry onion in oil. Add potatoes. When slightly brown add pepper, salt and parsley. Serve with roast lamb.
