Grilled Nachos

Things You'll Need: Heavy duty foil sheets about 29 x 18 inches | |
cooking spray | |
3 cups | tortilla chips |
2 cups | cheese,, ( try cheddar or Monterey jack) |
black beans, drained and rinsed | |
small can | green chilies |
1/2 cup | chopped tomatoes |
sliced black olives | |
chopped green onions | |
Sour Cream | |
Salsa | |
Guacamole |
Spray foil with cooking spray and place tortilla chips in the center of the foil, leaving several of foil around the chips to fold over the top of the prepared nachos.
Place half of the cheese on top of the nachos, spreading it evenly.
Add green chilis, black olives, chopped tomatoes, drained black beans, and other toppings except sour cream, salsa, and guacamole.
Fold the edges of the foil gently around the top of the nachos, forming a pouch. If the foil is not large enough, spray another strip of foil with cooking spray and place it on top and secure it to the bottom piece of foil by crimping the edges.
Place on grill over medium heat for 5 minutes. Check to see if cheese has melted. If not cook for 3-5 more minutes.
Top with Salsa, Sour Cream, and Guacamole.
