Rice-Shahi ( Nut and Raisin) Pulau

450 gms | Basmathi or long grain rice |
75 gms | ghee |
butter, alternative | |
1 in cinnamon stick | |
6 small | cardamoms |
2 large | cardamoms |
6 | cloves |
2 | bay leaves |
1 tsp | salt |

50-75 gms | raisins |
50-75 gms | mixed nuts, ( almonds, cashew, pistachio ) |
Wash rice in 4-5 changes of water, drain.
Heat ghee and fry cinnamon, cardamons, bay leaves and cloves for 1/2 min. Add washed rice,salt and twice the quantity of water. Bring to boil gently. Stir once or twice. Reduce heat, add raisin and nuts, cover and cook for 10 - 12mins or until water is totally absorbed. Serve with meat or vegetable curry.
