Ingredients (for crust): 450 gms all-purpose flour 2 level tsp salt 15 gms yeast, fresh or dried
    1/4 litre  water
    1 tsp  sugar
    3 tbsp  oil
Ingredients (for filling):
    1 tbsp  olive oil
450 gms grated mozzarella cheese
    2 cups  pizza sauce, tomato sauce
      Black pepper powder
    1 tbsp  oregano
Ingredients (for topping):
      Salami slices
      Olives
Bell peppers cut into thin stripes
      Chicken cooked
      Mushrooms sliced
4 red chilli crushed Ingredients (for pizza sauce): 900 gms tomatoes can crushed / 1 kg tomatoes (chopped)
    3 tbsp  olive oil extra virgin
    1/2 cup  water
      Salt
      Water

Method:

1.Mix the flour & salt into the mixing bowl.
2.Blend the fresh yeast with warm water & add to the dry ingredients with the oil.
3.If using dried yeast, dissolve the sugar in the warm water & sprinkle in the dried yeast.
4.Leave to stand in a warm place for about 10 minutes until frothy then add to the flour as above.
5.Mix to a rough dough in the basin.
6.Turn the dough out onto a clean working surface & knead for about 5 minutes or until the dough is firm & elastic, shape into a ball, place in basin & leave in a warm place until doubled in bulk.
7.Turn the risen dough out onto a floured working surface & press firmly with the knuckles to knock out the air.
8.Divide the dough into 4 pieces and shape each one into a ball & roll out each to an 8"-inch (20cm) circle.
9.Place each circle of dough onto a greased baking sheet.
10.Brush the dough with olive oil & cover with a layer of tomato sauce & grated cheese.
11.Season with pepper & sprinkle with oregano.
12.Decorate each one with the topping of your choice.
13.Use salami, cooked minced meat, black olives, sliced bell pepper, fried onions & mushrooms.
14.Sprinkle with crushed red chillies, if you like spicy.
15.Set the prepared pizza aside in a warm place for about 15-20 minutes before baking.
16.Bake the pizza in a preheated hot oven (425F,220C,gas mark 7) for 15-20 minutes.
17.Cut in wedges & serve warm.
18.For the pizza sauce, in a large saucepan bring tomatoes, oil & water (if using fresh tomatoes), to a simmer.
19.Simmer, uncovered for 20 minutes, stirring occasionally & mashing the fresh tomatoes with the back of a wooden spoon.
20.Simmer until sauce is reduced to about 2 1/2 cups.
21.Season sauce with salt & pepper, cool to r.t.p.
22.Sauce can be frozen for 2 weeks.
23.Makes about 2 1/2 cups.
