Asparagus Frittati

8 asparagus spears cut into 3 1/2" lengths | |
Butter | |
7 | eggs, beaten well |
1/2 medium | red onion, thinly sliced |
1 | red pepper |
3 T | parmesan cheese |
Blanch the asparagus spears in boilding salted water for 3 mins and then refresh in cold water. Drain and set aside.
Butter a 10" ovenproof pie plate. Arrange thinly sliced red onion on bottom of pan. Pour beaten eggs over onion. Arrange asparagus spears in spokes around pie plate alternating with 1 thinly sliced red pepper strip. Top with 3 T shaved parmesan cheese.
Bake in 350 overn for 20 minutes. Cut into 4 wedges
