Rice-Vegetable Pilau

400 gms | Basmati rice |
3 ozs ghee/ butter | |
1 | onion, chopped |
1 in cinnamon stick 10 cardamoms | |
6 | cloves |
2 | bay leaves |
3-4 tsp | salt |
Water | |
8-10 ozs sliced vegetables ( brinjal, potatoes, peas, carrots, French beans, long beans, corn, cauliflower. | |
1 tsp | each of garam masala, chilli, coriander and turmeric powder. |
Salt to taste |
Method
Heat ghee and fry onion until light brown.
Add cinnamon, bay leaves, cardamoms and cloves. Fry 1 min. Add mixed vegetables and fry 4-5 mins. Add rice. Sprinkle with garam masala, chilli, coriander and turmeric powder. Mix well. Add twice the measure of water. Add salt to taste. Bring to boil. Reduce heat, cover and gently cook for 12-15 mins without stirring, until water is completely absorbed. Serve with raita or curry.
