6 tbsp | reduced calorie stick margarine |
1/4 cup | unsweetened cocoa powder |
1/2 tsp | chocolate extract |
1 cup plus 2 tbsp | flour |
2 tsp | baking powder |
1 tsp | baking soda |
1/4 tsp | salt |
1/4 cup plus 2 tbsp | granulated sugar |
12 packets or 4 tsp | bulk sweet n low granulated sugar substitute |
1/4 cup | liquid egg substitute |
2 tsp | vanilla extract |
1 tsp | grated orange peel |
1/2 cup | buttermilk |
2 large | egg whites at room temperature |
1/4 tsp | cream of tartar |
Method:
1.Preheat oven to 325F.
2.Spray pan with non-stick cooking spray and set aside.
3.In small saucepan over medium heat, melt 2 tbsp margarine, remove from heat.
4.Stir in cocoa and chocolate extract, set aside to cool.
5.Into a small bowl, sift together flour, baking powder, baking soda, and salt then set aside.
6.In a large bowl with electric mixer at medium speed, cream remaining margarine, sugar, 9 packets sweet n low or 3 tsp bulk sweet n low, egg substitute, vanilla and orange peel.
7.Beat in reserved chocolate mixture, then add flour mixture alternately with buttermilk, beginning & ending with flour & beating well after each addition.
8.In large metal bowl with electric mixer at high speed, beat egg whites, cream of tartar & remaining.
9.Sweet n low until stiff peaks form.
10.Spoon into prepared pan, then bake for 30 minutes or until wooden toothpick inserted invented comes out clean.
11.Cool for 10 minutes then remove cake from pan and cool completely on rack.
