Chicken Rolls With Vegetables

Ingredients: | |
8 pieces | chicken breasts |
1 | carrot, large size, shredded |
1 | green pepper, medium size, cut into sticks |
1 | onion, medium size |
1/2 cup | orange juice, (optional) |
3 tbsp | olive oil |
2 tsp | Ginger, fresh, chopped or 1 tsp Ginger powder |
1 tbsp | cornflour |
3 tbsp | soy sauce |

Method:
1.Cut onion into thin strips.
2.In a skillet, heat 1 tbsp oil, then add onion, green pepper, carrot & Ginger.
3.Stir fry until crispy tender, then set aside to cool.
4.Heat oven to high heat (210-220*C).
5.Place each chicken breast between 2 pieces of plastic wrap and pound with mallet until very thin.
6.Season chicken slices with salt & pepper.
7.Put 2 tbsp of vegetable mix in 1 end of each chicken breast & roll up.
8.Close ends with toothpicks & place in a medium baking dish.
9.Cover chicken tops with remaining oil.
10.Put pan in oven & cook for 15 minutes until golden brown.
11.Turn chicken rolls & cook for another 15 minutes.
12.You can add more oil if needed.
13.Dissolve cornflour in orange juice and soy sauce & stir well.
14.In a saucepan add dissolved mixture and heat over medium heat for 3-5 minutes, stirring constantly, until smooth & slightly thick.
15.Place chicken rolls on a platter & top with soup and orange sauce.
16.You may garnish with shredded carrots & green pepper.
