Swedish Meatballs

2 lbs | ground beef, (chuck) |
2 lbs | ground veal |
3/4 cup | bread crumbs |
3 | eggs, lightly beaten |
1 1/2 tbsp | sugar |
1 tbsp | allspice, heaping with overflow |
1 tbsp | nutmeg, heaping with overflow |
1 1/2 tsp | salt |
1 tsp | freshly ground pepper |
2 tbsp | oil, for frying |
1 cup | beef broth |
1 cup | heavy cream |
1 pinch | brandy, to taste |
Combine the ground beef, veal, bread crumbs, eggs, sugar, allspice, nutmeg, salt and pepper
Shape into 1/2 inch balls
Heat oil in a skillet and brown the meatballs
Remove excess oil, add some butter and flour and make a rue.
Add beef broth and bring to simmer.
Add meatballs and heat through.
Add brandy.
Add heavy cream slowly.
